Can I be honest? I am a believer, but I question the religion sometimes. I don’t have answers to a lot of questions, I get inspired by quotes and sayings, you might have noticed it already.
This quote in the title is from Pope John Paul II, today it feels more real as what is happening to the World looks so unreal, at least to me, what do you think?
I am avoiding reading the news too much because I don’t know how manipulated, transformed or real they are anymore but there are facts that I can’t ignore. The Covid-19 is real, the spread is critical, we have to stay confined and be careful and you know what is real too: the pollution is going down tremendously and I am wondering what else is good, can we observe and find out some changes that we should remember and be aware of, what else is coming out of all this?
I read a lot of messages about using this confinement to focus on Family, Friends and use that extra time at home to take time.
After cleaning the house, taking care of the kids, answering few emails and going over work’s projects, I am not sure about having time to “take time”.
Am I doing something wrong? - Yes!
I shouldn’t see it like that. I can finally be more in harmony with the earth: wake up when the sun rise, go to bed at sunset and during the day while I take the kids outside start looking at the changes happening while Spring is around the corner, when I am cooking teach the kids to like home made food and once we do homework look at them, how they learn, listen to their questions, their feelings and when it is time for me to have some “me-time” explain and teach them to respect that time.
Easier to say than to do but I am working on it. And make sure you are seating down at breakfast, lunch and dinner, wait for each other until everyone is done before leaving the table. You might find it awkward at first, but it is physically and spiritually healthy.
Here you go, cheer to a better life with a glass of wine, cheese and bread because for dinner tonight I am making my favorite salad with bread and cheeses:
The salad is a green salad with sunflower seeds, an avocado cut in small pieces, little squares of swiss or/and parmesan cheese and tomatoes cut in pieces.
I make my own vinaigrette with:
1 ½ Tablespoon of vinegar (either balsamic or red wine vinegar)
3 Tablespoon of Olive Oil
1 teaspoon of mustard (I like the Dijon)
Salt and pepper
I mix it up in a bowl and poor in onto the salad before tossing.
Then you can have bread and cheese on the side or pizzas, bruschetta, or even toasts with cream cheese with smoked salmon on top, whatever pleases you.
Now as for the wine I would go with our Fleur de Solène because I am having some strong cheeses with earthy and garlicky flavor so I need a wine that would pair well and not overpower the cheeses as well as being compatible with it.
